A Kyoto city survey found that nearly a third of all tourists bought nama yatsuhashi as a souvenir. The biggest makers have clashed in court — Izutsu and Shogoin fought a years-long legal battle over which could claim to be founded in 1689. Modern flavors include matcha, strawberry, and even ramune (soda), but classic cinnamon remains king.
How to eat
- 1Nama (fresh) yatsuhashi is soft and ready to eat straight from the package — no preparation needed.
- 2Eat it within a day or two of buying. The soft dough dries out quickly and loses its signature chewiness.
- 3If you're buying multiple flavors as souvenirs, taste one of each before you leave Kyoto. They don't improve with age.
